- 2 cups fresh pineapple chunks
- 2 cups coconut water
- 3 tablespoons fresh lime juice
- 2 tablespoons honey or agave syrup
- 8-10 fresh mint leaves
- 1 cup ice cubes plus more for serving
- Pineapple wedges for garnish
- Fresh mint sprigs for garnish
Blend the pineapple: Put the pineapple in your blender. Blend until it's totally smooth and creamy.
Strain it: Pour blended pineapple through a strainer into a pitcher. This removes any chunky bits completely.
Add the liquids: Pour in coconut water, lime juice, and honey now.
Mix well: Stir everything together until the honey dissolves. Make sure it's all mixed up really good.
Muddle mint: Put 8-10 mint leaves in your shaker. Gently press them to release the mint smell.
Shake with ice: Add ice to the shaker with your mix. Shake it hard for 15 seconds.
Pour into glasses: Fill four glasses with ice. Strain the mixture over the ice so it's nice and smooth.
Add garnish: Top each glass with a pineapple wedge and mint sprig. Makes them look really pretty.
