Ingredients
  

  • 1/2 cup cooked and mashed sweet potato
  • 1 large frozen banana
  • 1 cup milk of choice
  • 1/4 cup plain or vanilla Greek yogurt
  • 1 tbsp peanut butter or almond butter
  • 1/2 tsp vanilla extract
  • 1/4 tsp ground cinnamon

Instructions
 

  • Prepare the sweet potato: Poke holes in a potato with a fork. Microwave it for 5-7 minutes until soft, then scoop out the inside.
  • Combine all ingredients: Add 1/2 cup mashed sweet potato, 1 frozen banana, 1 cup milk,1/4 cup Greek yogurt, 1 tablespoon peanut butter, 1/2 teaspoon vanilla, and 1/4 teaspoon cinnamon to the blender jar.
  • Blend until very smooth: Secure the lid on your blender and blend on high for about one minute until the drink is perfectly creamy.
  • Check thickness and serve: If your smoothie is too thick, add a bit more milk. Pour into a glass or jar and enjoy it right away.

Notes

  • For a sweeter taste, add a small splash of maple syrup.
  • You can use canned sweet potato puree if you do not have any.
  • Use a very ripe banana for the best flavor in your smoothie.
  • Store leftovers in a sealed jar in the fridge for up to one day.
  • Add a handful of spinach for more vitamins; you will not taste it.
  • A small pinch of salt can make all the sweet flavors taste better.
