- 1/2 cup cooked and mashed sweet potato
- 1 large frozen banana
- 1 cup milk of choice
- 1/4 cup plain or vanilla Greek yogurt
- 1 tbsp peanut butter or almond butter
- 1/2 tsp vanilla extract
- 1/4 tsp ground cinnamon
Prepare the sweet potato: Poke holes in a potato with a fork. Microwave it for 5-7 minutes until soft, then scoop out the inside.
Combine all ingredients: Add 1/2 cup mashed sweet potato, 1 frozen banana, 1 cup milk,1/4 cup Greek yogurt, 1 tablespoon peanut butter, 1/2 teaspoon vanilla, and 1/4 teaspoon cinnamon to the blender jar.
Blend until very smooth: Secure the lid on your blender and blend on high for about one minute until the drink is perfectly creamy.
Check thickness and serve: If your smoothie is too thick, add a bit more milk. Pour into a glass or jar and enjoy it right away.
