For the Strawberry Basil Syrup:
- 1/2 cup strawberries
- 1/4 cup fresh basil leaves
- 1/4 cup water
- 1/4 cup sugar
For the Mocktail:
- 2 oz strawberry basil syrup
- 1 oz lime juice
- 4 oz club soda
- Ice cubes
- Strawberry slices and basil leaves for garnish
Combine base ingredients. Add strawberries, basil, sugar, and water to a saucepan over medium heat. Stir often.
Cook the mixture. Heat for 5-8 minutes until sugar dissolves completely. Press berries with spoon to release juices.
Strain and cool. Pour through a strainer, pressing solids. Let syrup cool to room temperature.
Assemble each mocktail. Add 2 oz syrup and 1 oz lime juice to a glass with ice. Top with club soda and stir.
Garnish and serve. Add fresh strawberry slices and basil leaves. Serve right away while fizzy and cold.
