Passionfruit Mocktail

- 1 cup passionfruit juice
- 2 tablespoons lime juice
- 1 tablespoon honey
- 8 mint leaves
- 2 cups sparkling water
- 1 cup ice cubes
- Lime slices for garnish
Make fresh passionfruit juice. Cut passionfruits and scoop out pulp. Press through strainer with back of spoon to collect juice.
Mix the sweet and sour. Combine passionfruit juice, lime juice, and honey in a pitcher. Stir until honey dissolves completely.
Add the cold parts. Fill glasses with ice cubes. The ice should take up about half of each glass.
Pour and fizz. Add the juice mixture to glasses, then top with sparkling water. Leave some room at the top.
Make it special. Gently add mint leaves and lime slices. Push some mint down into the drink for more flavor.
Serve right away. Give a quick stir before drinking. The bubbles make it best when fresh!
