Equipment

  • highball or collins glass
  • jigger or measuring spoons
  • bar spoon or stirrer

Ingredients
  

  • 4 oz grapefruit juice (freshly squeezed)
  • ½ oz lime juice (freshly squeezed)
  • ½ oz maple syrup
  • 3 oz sparkling water or club soda
  • ice
  • grapefruit slice (for garnish)
  • lime wheel (for garnish)
  • coarse salt (for the rim (optional)

Instructions
 

  • Rim the glass: If using salt, run a lime wedge around the rim of your glass and dip it into a small plate of coarse salt.
  • Add ice and liquids: Fill the glass completely with ice. Pour in grapefruit juice(4 oz), ½ oz of lime juice, and ½ oz of maple syrup.
  • Stir the base: Use a bar spoon to stir the mixture for about 15 seconds until it is well-chilled and combined.
  • Top with sparkling water: Slowly pour sparkling water(3 oz) over the top until the glass is full and the drink is bubbly.
  • Garnish and serve immediately: Add a fresh grapefruit slice or a lime wheel to the glass for garnish and enjoy right away.

Notes

  • For the very best flavor, always use freshly squeezed citrus juice.
  • Feel free to adjust the amount of maple syrup to your taste.
  • Chilling your serving glass beforehand will keep your drink colder longer.
  • Don’t stir after adding the sparkling water to keep it very bubbly.
  • A sprig of fresh mint or rosemary also makes a lovely garnish.
  • To make it spicy, muddle a jalapeño slice in the glass first.
