For the Mocktail:
- 6 oz unsweetened coconut water
- 1/2 oz about 1 tablespoon lime juice
- 1-2 tablespoons mint honey syrup
- Ice cubes
- Cucumber slices for garnish
- Fresh mint sprig for garnish
- Lime wedge for garnish
Mint Honey Syrup:
- 1/4 cup honey
- 1/4 cup water
- 10 sprigs fresh mint leaves
Make the mint-honey syrup: Combine honey, water, and mint in a small saucepan. Simmer on medium-low heat for 5-8 minutes.
