Ingredients
  

For the Mocktail:

  • 6 oz unsweetened coconut water
  • 1/2 oz about 1 tablespoon lime juice
  • 1-2 tablespoons mint honey syrup
  • Ice cubes
  • Cucumber slices for garnish
  • Fresh mint sprig for garnish
  • Lime wedge for garnish

Mint Honey Syrup:

  • 1/4 cup honey
  • 1/4 cup water
  • 10 sprigs fresh mint leaves

Instructions
 

  • Make the mint-honey syrup: Combine honey, water, and mint in a small saucepan. Simmer on medium-low heat for 5-8 minutes.
  • Strain and cool: Remove mint leaves using a strainer. Let the syrup cool down completely before using.
  • Prepare your glass: Fill a tall glass with plenty of ice cubes for maximum chill factor.
  • Add the base flavors: Pour in lime juice and mint honey syrup first so they mix well together.
  • Pour in coconut water: Add the coconut water slowly, watching as the flavors combine in the glass.
  • Garnish with flair: Add cucumber slices, a fresh mint sprig, and a lime wedge on the rim.
  • Give a quick stir: Mix everything gently with a straw or stirrer before enjoying.

Notes

  • Make extra syrup to keep in the fridge for up to two weeks in an airtight container.
  • For a sparkling version, replace half the coconut water with club soda or sparkling water.
  • Adjust sweetness by changing the amount of mint honey syrup to match your taste preferences.
  • Chill ingredients beforehand for the most refreshing drink with less ice dilution.
